Iberico jam cupcakes recipe

Cupcakes are a trendy treat, and you are probably thinking of those pretty creations topped with sweet icing of different colours and flavours. But how about making a slightly different cupcake, a savoury one? Iberico ham from Mariscal & Sarroca is perfect for creating savoury cupcakes that you can enjoy as a starter or as a snack.

Ingredients:
– 4 eggs
– 100 g Iberico ham from Mariscal & Sarroca
– 100 g Greek yoghourt
– 40 g butter
– 50 ml milk
– 200 g flour
– 8 g baking powder
– 1 tsp cumin powder
– Salt and pepper to taste

Melt the butter in a saucepan on a medium heat or in the microwave. Whisk the eggs with the butter and the Greek yoghourt. Add the sifted flour and baking powder to the mixture.  Mix well and then add the milk and work it into the dough.

Preheat oven to 180º C. Mince/chop the ham finely and add it to the mixture. Season with the salt, pepper and cumin. Blend together.

Pour this mixture into individual cupcake cases and bake at a temperature of 180º C for about 15 minutes until golden and well cooked inside.

Let the cupcakes cool slightly before taking them out of the tray. You can enjoy them warm or cold. You may choose to add a topping of chopped ham, cream cheese… the result will always be amazing.
