It’s black truffle season in Spain
Black truffle, also known as the black diamond of kitchens, is in season. When the cold weather arrives in Teruel the tuber melanosporum, or black truffle, is ready to be enjoyed. This gourmet food is infused in the extra virgin olive oil that preserves our Albarracin Sheep’s cheese, which absorbs the intense flavour and aroma of the mysterious fungus.
Truffles grow mainly amongst the roots of oaks. They are a naturally organic product, very sensitive to chemicals and the use of pesticides or fertilizers. By the end of autumn, trained dogs go out sniffing in the forests to find the best specimens. Truffles are highly valued and very expensive.
Black truffles present a dark grey colour, with purple nuances, and are irregular in shape. Their weight can vary from 20 g to 300 g. They give out a piquant and intense aroma. Truffles have been used for cooking throughout history, and often aphrodisiac properties have been attributed to them.
In Spain the best black truffles grow in Teruel, region of Aragon, where the weather is extreme, with very cold winters, warm summers and very little rain. Mariscal & Sarroca combines this delicacy with the mature sheep’s cheese from the mountains of Albarracin, in Teruel, with amazing results.
