You can use mini tartlets or sliced bread cut in small squares. Distribute the ingredients on the bread to make them look professional and arrange them on a tray. The gold olive oil and the gold Bubub gelée will add a lovely sparkle.

STARTER: SAFFRON PRAWNS

Use fresh peeled prawns for this recipe. Heat a drizzle of extra virgin olive oil on a pan, sauté some sliced garlic and add a few threads of saffron to release their aroma. Quickly add the prawns, toss them in the pan for a couple of minutes, taking care not to overcook them, and voilà! You may choose to serve them over a few salad leaves.

MAIN: VEAL ESCALOPES WITH CECINA AND GOAT’S CHEESE.

You can swap the veal for beef, pork or chicken. You will need one thick slice per person. Cut the steak lengthwise, keeping it together, like a butterfly that you will fill with beef cecina or venison carpaccio and slice of Asturian goat’s cheese. Close it and press to keep it together, if necessary use a toothpick so that the filling does not spill when handled. Dip the escalopes in beaten egg and breadcrumbs, and deep fry in hot olive oil. Drain on kitchen paper and serve with a side of seasonal vegetables.

You can complement these wonderful dishes with a fantastic organic wine from cellar Can Feliu, in Majorca. Choose a red, rosé or white. Any of them will be the perfect partner to your delicious dinner.

And to keep the conversation going around the table, a cheese board with a variety of artisan cheeses from selected producers in Spain with some fresh fruits and tempting quince jelly. All you need now is a glass of Spanish cava to toast for all the good memories of 2014 and the ones that 2015 will bring us.

Mariscal & Sarroca wish you a very Happy Christmas and all the best for the New Year.
