Tumbet from Mallorca

The Tumbet is a delicious vegetarian dish typical of the island of Mallorca. It’s very popular during the summer months. It uses earth ingredients: eggplant, potatoes, peppers and tomatoes.

The preparation is simple, but it takes time:

– Fry in extra virgin olive oil the vegetables separately, gradually bringing them together in a typical clay pot.

– Cover the vegetables with a sauce of fresh tomato “sofrito” with garlic. Although the typical recipe is fully vegetarian, it’s very common to see  it accompanied by pork or fish.

The best accompaniment with Tumbet is a good red wine of Bodegas Can Feliu of Porreres.
